food, only cold
water should be
used. Mix with
equal quantity
of water and
allow ten
minutes standing
time to allow
full flavor to
develop. The
water acts as a
catalyst that
helps yield the
essential oil
mustard which
produces that
unmistakable
taste.
The strength of
flavor
diminishes with
time so we
recommend that
you make your
mustard fresh
each time. A
pinch or tow of
dry mustard will
prk up a
vinaigrette
dressing or can
be added to
mayonnaise to
make a tasty

love this but I

it and can't
find anything on
this!

Colman's mustard
has of course
many uses other
than spicing up
your Sunday
roast. The
following are a
sample, which I
have trawled
from the Web. I
cannot
personally vouch
for most of
them, but intend
to experiment as
and when the
occasion arises:
Some
uses of mustard
Tins :
Mustard and
honey at bedtime
for coughs, a
pinch of mustard
in a glass of
water for
hiccups.
Colman's poultry
mustard fed to
chickens
stimulates egg
production.
To mend leaky
car radiators
temporarily,
pour in contents
of 2 oz tin of
mustard while
car is running.
Sprinkle over
plants to rid
them of insect
pests.
Before
cooking mussels,
put them in a
bucket of water
with a few
teaspoonfuls of
dry Colman's to
make them spit
out the grit and
sand.
Use a thin
mixture of
Colman's and
water to catch
worms for
fishing. You
have to find a
wormhole, and
pour the mixture
in. The worms
wiggle out and
then you need to
rinse them off
before putting
them in your
bait box
Mustard has been
grown in England
since Roman
times, but just
two varieties
are generally
grown now, a
brown mustard, (Brassica
Juncea) and
white mustard, (Sinapis
alba). These
belong to the
Crucifer family
of plants which
include cabbage,
(in all its
varieties!) and
Stocks and
Wallflowers. A
black mustard, (Brassica
Ingra), is also
grown. Anybody
fancy a bit of
Wallflower with
their roast
beef?!

Perhaps the
original
mustard,
violette mustard
is made from
grape must that
is blended with
crushed mustard
seed. Not your
typical mustard
as it is a deep
purple color and
it has a fruity
flavor with a
lightly tannic
finish.
Methods
:
Put
the racks in a
dish flesh-side
up and make
slashes into the
flesh with a
sharp knife to
allow the
flavors to
penetrate. Mix
together 2 tbsp
olive oil, the
mustard, garlic,
rosemary and
parsley. Season
well and rub the
mixture onto the
flesh to coat
the lamb evenly.
Cover and
marinate in the
fridge for 1
hour or,
ideally, all
day.
Heat
the oven to
200C/fan
180C/gas 6. Put
the lamb in a
roasting tin and
cook for 15-25
minutes
depending on the
size of the
rack. Remove
from the oven,
cover with foil
and rest for 10
minutes before
carving into
cutlets and
serving on
warmed plates.
